Ingredients

  • 1 can tomato soup (10 oz)
  • 1 can pinto beans (15 oz), drained and rinsed
  • 1 can cut green beans (14.5 oz), drained
  • 1 can canned tuna (5 oz), drained
  • 1 tbsp olive oil
  • 1/2 tsp dried oregano
  • salt to taste
  • black pepper to taste

Instructions

  1. Heat olive oil in a medium pot over medium heat.
  2. Add tomato soup and bring to a gentle simmer.
  3. Stir in pinto beans and drained green beans.
  4. Season with dried oregano, salt, and black pepper.
  5. Cover and simmer 5 minutes to heat beans through and meld flavors.
  6. Flake tuna with a fork and gently fold into the stew.
  7. Simmer 2–3 more minutes to warm the tuna without breaking it up too much.
  8. Taste and adjust salt and pepper as needed.
  9. Serve hot, optionally with crusty bread or rice.
