Ingredients

  • 2 large eggs
  • 1 medium pear
  • 50 g dark chocolate

Instructions

  1. Preheat oven to 180°C (350°F) and butter two small ramekins or an ovenproof dish.
  2. Core and thinly slice the pear; sauté briefly in a dry skillet or toss with a little lemon juice to prevent browning.
  3. Chop the dark chocolate into small pieces.
  4. Divide pear slices between the ramekins and sprinkle chocolate pieces over the fruit.
  5. Carefully crack one egg into each ramekin on top of the pear and chocolate.
  6. Season lightly with a pinch of salt and a little black pepper if desired.
  7. Place ramekins on a baking tray and bake for 10–15 minutes until whites are set but yolks still slightly runny, or longer to fully set.
  8. Remove from oven, let sit for 1–2 minutes, then serve warm.
