Ingredients

  • 1 each avocado
  • 1 each banana
  • 2 cups bagged leafy greens
  • 1 tub yogurt
  • 300 g packaged raw meat
  • 4 each egg
  • 1 tbsp butter
  • 4 each tortilla/flatbread

Instructions

  1. Pat meat dry, season lightly with salt and pepper and break into small pieces if ground or slice thin if whole cut.
  2. Heat a skillet over medium-high heat and add a little oil or butter, then cook the meat until browned and cooked through, breaking up as needed.
  3. Remove meat from pan and keep warm, wipe pan clean if needed.
  4. Mash avocado with a pinch of salt and a squeeze of lemon or lime if available.
  5. Whisk eggs with a pinch of salt and pepper.
  6. Melt butter in the skillet over medium heat and cook the eggs, stirring gently for soft scramble or leaving to set for folded eggs.
  7. Warm tortillas in a dry skillet or wrapped in a towel in the microwave until pliable.
  8. Assemble wraps by layering tortilla with a spoonful of yogurt, a handful of greens, scrambled eggs, cooked meat, and mashed avocado.
  9. Add banana slices to one side of the wrap for a sweet contrast or serve on the side.
  10. Fold or roll the tortilla tightly, toast briefly in the skillet if desired to seal and add crispness, then serve immediately.
