Makes 4 tartines. Ingredients: 4 slices sourdough bread, 6 tomato slices (about 2 medium tomatoes), 6 fresh basil leaves (torn), 1/4 cup crumbled feta, 2 tbsp extra-virgin olive oil, 1 clove garlic, 1/2 tsp flaky sea salt, 1/4 tsp freshly ground black pepper. Adjust quantities for more servings.
Preheat broiler or a skillet. Brush both sides of sourdough with olive oil and toast until golden and crisp (2–4 minutes under broiler or 2–3 minutes per side in a skillet). Rub warm toast with the cut side of the garlic. Arrange tomato slices, scatter torn basil, and sprinkle feta. Season with flaky salt and pepper, then drizzle a little olive oil and serve immediately.
Tips: pat tomato slices dry to avoid soggy toast; tear basil instead of chopping to avoid bruising; warm the toast so the feta softens slightly. Variations: add a smear of ricotta, a few chili flakes, or a balsamic reduction. Serve with a simple salad for a light meal.
