Preheat oven to 220°C (430°F). Add oil and butter to a 20–22 cm ovenproof skillet and heat until sizzling. Prick sausages, brown in the hot skillet for 4–5 minutes, then roast in the oven for 5 minutes to finish cooking. Keep the sausages in the skillet.
Whisk flour, eggs, milk, salt and pepper until smooth and frothy. Rest batter for 5 minutes.
Pour batter around the sausages in the hot skillet. Bake 20–25 minutes until puffed and golden. Rest 2 minutes, garnish with parsley if using, then slice and serve.
