Heat oil in a heavy skillet or shallow pot over medium-high heat until hot. Brown lamb pieces in a single layer, 5–7 minutes. Push to one side, add onions, cook until softened, about 4 minutes. Stir onions with lamb, add cumin and salt, toss to coat. Pour in 1 cup water, bring to a simmer, then reduce heat to low. Cover and simmer gently until lamb is tender, 35–45 minutes, adding splash of water if needed. Add olives, simmer uncovered 5–10 minutes to meld flavors and reduce sauce. Taste and adjust seasoning, then remove from heat and rest a few minutes before serving.
