Ingredients: 2 large eggs, 1 tbsp milk, 1 tsp butter, 30 g chopped spinach, 30 g crumbled feta, 1 pinch salt, 1 pinch black pepper. Prep time: 5 min. Cook time: 5 min. Difficulty: Easy.
1) Whisk eggs, milk, salt and pepper until blended. 2) Heat a nonstick skillet over medium-low and melt butter. 3) Add spinach and sauté 30–60 sec till wilted. 4) Pour egg mixture over spinach, tilt pan to spread. 5) Sprinkle feta evenly.
