A hearty, layered bake that combines beef, bacon, spinach and melty cheese in one oven dish.
Gather: 500 g beef mince, 8 slices streaky bacon, 200 g spinach, 1 long eggplant, 2 medium potatoes, 1 bulb garlic, 200 g cheese block, 2 tbsp plain flour, salt, pepper, oil. Preheat oven 200°C/400°F. Thinly slice potatoes and eggplant; mince garlic; grate cheese; roughly chop spinach. Dice bacon.
Sear diced bacon in a pan until crisp; remove. Brown beef mince in same pan, add minced garlic, season, then stir in flour to bind. Wilt spinach briefly in the pan and combine with beef and bacon. Layer half the potato and eggplant slices in an oiled baking dish, add the beef mixture, then remaining potato/eggplant. Top with grated cheese, cover with foil and bake 30 minutes; remove foil and bake 10–15 minutes until potatoes are tender and cheese is golden.
Rest 5–10 minutes before slicing to set. Check seasoning and add a drizzle of olive oil or chopped fresh herbs if available. Serve with a simple salad or steamed veg for a complete meal. Leftovers refrigerate 2–3 days; reheat covered in oven or microwave.
