Ingredients: 500 g minced beef, 200 g streaky bacon, 150 g spinach, 1 tsp salt, 1/2 tsp black pepper, 2 tbsp olive oil, 1 clove garlic. Serves 4.
Heat olive oil in a large skillet over medium-high. Cook bacon until crisp, remove and set aside. In the same pan, cook garlic 30 seconds, add beef and brown until no pink remains. Return bacon, season with salt and pepper, add spinach in batches until wilted. Cook 2–3 minutes more, then adjust seasoning and serve.
Serve hot straight from the skillet. Pair with a light salad or crusty bread; leftovers can be reheated easily.
