Combine and measure ingredients (see Ingredients). Heat 1 tbsp oil in a large skillet over medium-high. Sauté 1 small finely chopped onion until translucent (≈3 minutes), add 1 minced clove garlic and cook 30 seconds. Add 300 g ground pork and break up; brown through. Stir in 1 tbsp soy sauce, 1 tsp chili flakes and 0.5 tsp salt, cook 2–3 minutes to meld flavors.
Make four shallow wells in the browned pork. Crack one egg into each well, reduce heat to medium-low, cover, and cook until whites set and yolks reach your preferred doneness (4–6 minutes for runny yolks).
Finish with 1 tbsp chopped parsley. Serve hot—spoon pork and eggs onto plates or over rice/toast. Variations: add bell pepper or spinach when sautéing the onion; swap chili flakes for sriracha; use pork seasoned with a splash of sesame oil for an Asian twist.
