Season chicken and brown in 1 tbsp olive oil. Remove. Sauté onion in remaining oil and butter until translucent. Add garlic, then spinach until wilted. Return chicken, beat eggs with salt/pepper, pour over skillet, scramble until set, top with cheese, and serve.
Keep heat medium to avoid overcooking eggs. Fold eggs gently as they set. Add cheese toward the end to melt without overcooking the eggs.
