For 2–3 servings: 500 g thinly sliced raw beef, 2 tbsp cooking oil, 2 tbsp soy sauce, 1 tbsp vinegar, 1 tbsp oyster sauce, 1 tsp salt, 1/2 tsp black pepper. Toss beef with soy, vinegar, oyster sauce, salt and pepper; marinate 10–15 minutes while you heat the pan.
1) Heat a wok or large skillet over high heat and add 2 tbsp oil. 2) Add beef in a single layer—work in batches if needed—and stir-fry 3–4 minutes until browned and just cooked. 3) Return any batches to pan, toss to coat in reduced sauce, and remove from heat. Tip: avoid overcrowding to keep beef from steaming; rest 1–2 minutes before serving.
