A hearty, no-fuss casserole you can make with pantry basics.
1 onion, 2 carrots, 3 potatoes, 500 g beef mince, 2 slices bread (for crumbs), oil, salt and pepper, splash of stock or water.
1. Preheat oven to 200°C (390°F). 2. Peel and dice onion, carrots and potatoes into bite-sized pieces. Tear bread into pieces and pulse to coarse crumbs (or squeeze by hand). 3. Heat a drizzle of oil in a skillet over medium-high heat. Cook onion 3–4 minutes until translucent. Add beef mince, break up and brown. Stir in carrots, season with salt and pepper and cook 3–4 minutes; add a splash of stock/water if dry. 4. Lightly oil a baking dish. Layer half the potatoes, spoon over the beef-carrot mix, then top with remaining potatoes. Scatter breadcrumbs over top and drizzle a little oil. Cover with foil and bake 25 minutes, remove foil and bake 15–20 minutes until potatoes are tender and top is golden. Rest 5 minutes before serving.
