You need: 1 onion (chopped), 2 carrots (diced), 3 potatoes (peeled and sliced or cubed), 500 g beef mince, 2 slices bread (crumbed), salt, pepper, 1–2 tbsp oil. Preheat oven to 200°C (400°F). Boil potatoes 10–12 minutes until just tender; drain. Meanwhile, chop onion and carrots and make bread crumbs by blitzing or tearing the bread.
1) Heat oil in a pan, sauté onion 3–4 min until soft. 2) Add diced carrots and cook 4–5 min. 3) Add beef mince, break up and brown 6–8 min; season with salt and pepper. 4) Transfer mince mixture to an ovenproof dish. 5) Arrange par-cooked potatoes over the mince or mash briefly with a little oil/milk and spread on top. 6) Sprinkle bread crumbs over potatoes and bake 25–30 min until top is golden and filling bubbling.
Rest 5 minutes before serving. Serve with a simple salad or steamed greens. Swap bread crumbs for grated cheese, use sweet potatoes for a different flavor, or add a splash of Worcestershire sauce to the mince. Total time: ~60 minutes (20 prep, 40 cook). Difficulty: easy (2/5).
