A simple marinade turns thin-sliced beef into a fast, flavorful stir-fry.
• 1 lb thinly sliced beef (against the grain) • 3 tbsp soy sauce • 1 tbsp vinegar (rice or white) • 1 tbsp oyster sauce • 1 tsp salt • 1/2 tsp black pepper • 2 tbsp cooking oil
1. Slice beef thin against the grain into bite-size pieces. 2. Mix soy sauce, vinegar, oyster sauce, salt, and pepper until salt dissolves. 3. Toss beef in marinade to coat, cover, and refrigerate 20–120 minutes. 4. Heat oil in a large skillet or wok over medium-high. Add beef in a single layer, leaving excess marinade behind. 5. Stir-fry 4–6 minutes until browned and cooked through. Taste and adjust seasoning, then serve immediately.
• Don’t overcrowd the pan—work in batches if needed. • For more flavor add minced garlic or sliced green onions to the hot oil before the beef. • Serve with steamed rice, noodles, or stir-fried vegetables.
