Ingredients: 1 lb potatoes (washed, cut into 1/2–3/4" pieces), 12 oz pork sausage (links removed or bulk), 1–2 tbsp oil, salt, pepper, optional: onion, garlic, fresh parsley.
1) Prep potatoes into even pieces. 2) Heat 1 tbsp oil in a large skillet over medium-high. 3) Add sausage, break up, brown 5–6 minutes; remove and set aside. 4) Add more oil if needed, then potatoes in a single layer; season. 5) Cook undisturbed 4–5 minutes until golden, flip in batches to brown all sides (10–12 minutes). 6) Return sausage, stir, cook 2–3 minutes to finish. Total cook ~25 minutes.
Tips: Don’t overcrowd the pan—work in two batches if needed. Use a heavy skillet (cast iron) for even browning. Add diced onion or garlic in the last 4 minutes to avoid burning. Finish with chopped parsley or a squeeze of lemon.
