A quick, rustic bruschetta that turns simple chicken and tomatoes into a satisfying weeknight meal.
Makes 2–4 servings. You need: 1 lb chicken breast (trimmed), 2 medium tomatoes (seeded and diced), 4 slices rustic bread, 2 tbsp olive oil, 1 clove garlic (minced), salt, pepper, fresh basil or parsley (optional), 1 tbsp balsamic or lemon juice. Prep: dice tomatoes, mince garlic, pat chicken dry and season both sides with salt and pepper.
1) Heat 1 tbsp oil in a skillet over medium-high. Cook chicken 6–8 minutes per side (thicker pieces may need more) until internal temp is 165°F/74°C. Rest 5 minutes, then slice. 2) While chicken cooks, toss tomatoes with minced garlic, 1 tbsp olive oil, balsamic or lemon, salt, pepper and chopped herbs. 3) Toast bread slices until golden. Rub each toast with a cut garlic clove if desired. Top with tomato mixture, then sliced chicken. Drizzle any pan juices over the top and serve immediately.
Total time: ~40 minutes (15 min prep, 25 min cook). For faster cook, butterfly chicken or pound to even thickness. Use cherry tomatoes if sweeter, or add a spoonful of ricotta or shaved parmesan for richness. To make ahead, keep tomato mix chilled and assemble just before serving to avoid soggy bread.
