  • 250 g plain flour

  • 400 g ground beef
  • 150 g cheese block
  • 200 g bagged spinach

Instructions

  1. Preheat oven to 200°C (400°F).
  2. Cut bacon into lardons and fry until crisp; drain on paper towel and reserve fat.
  3. In same pan brown ground beef in bacon fat, season with salt and pepper, drain excess fat and cool slightly.
  4. Wilt spinach in a hot pan with a splash of water until just collapsed; squeeze out excess liquid and roughly chop.
  5. Grate or crumble the cheese block.
  6. Make a rough pastry: combine 250 g plain flour, 60–80 ml cold water, 60 g cold cubed butter (or 2 tbsp oil) and a pinch of salt; mix until it just comes together, form a disk and chill 15 minutes.
  7. On a floured surface roll dough into a roughly 30 cm (12-inch) circle.
  8. Mix beef, bacon, spinach and most of the cheese in a bowl; adjust seasoning.
  9. Heap the filling onto the center of the dough, leaving a 4–5 cm border.
  10. Fold the dough edge over the filling, pleating as you go to form a rustic edge; brush edge with a little water or beaten egg if available.
  11. Sprinkle remaining cheese over the exposed filling.
  12. Bake until crust is golden and filling is bubbly, about 25–30 minutes.
  13. Let rest 5–10 minutes before slicing and serving.
