A crisp, 10-minute garden salad with mellowed onions ready in minutes.
Ingredients (serves 4): about 5–6 x 10 oz bags of ready-to-eat lettuce (or equivalent), 1 medium brown onion, 2 medium tomatoes, 1 large carrot, 1/2 cup bottled cold water for soaking, salt and dressing as desired.
Rinse lettuce, tomatoes, and carrot under cold water. Pat lettuce dry and tear into bite-sized pieces. Core and slice tomatoes. Peel and grate or thinly slice the carrot. Slice the onion into thin rings, submerge in 1/2 cup cold bottled water for 5–10 minutes, then drain thoroughly. Combine all vegetables and toss gently with dressing.
Variations: add cucumber, avocado, or crumbled cheese; swap bottled water soak for iced water with a splash of vinegar for brighter flavor. Timing: prep 10 minutes, no cooking. Storage: keep dressing separate and refrigerate up to 24 hours.
