Makes 4 toasts. Ingredients: 4 slices bread, 3 eggs, 1/2 cup milk, 2 tbsp butter, 3/4 cup shredded cheddar, salt and pepper. (Quantities scaled for four servings.)
Whisk eggs, milk, salt and pepper. Melt 1 tbsp butter in a nonstick skillet over medium, add egg mixture and gently scramble until just set; remove. Toast bread (toaster or skillet with remaining butter). Divide scrambled eggs over toast, sprinkle cheddar, then warm in skillet on low or under broiler 1–2 minutes until cheese melts. Serve immediately.
