Stir flour, salt and 2 tbsp water to form a soft dough. Rest 10 minutes. Divide into 4 pieces and roll into thin rounds.
Cook bacon until crispy, drain fat. Brown ground beef with a pinch of salt. Quick-wilt spinach in the same pan for 1–2 minutes. Return bacon to mix.
Warm a clean skillet and cook flatbreads 1–2 minutes per side until puffed and lightly browned. Top with beef-spinach-bacon and serve immediately.
