Ingredients: 200 g pasta, 150 g bacon (sliced), 3 medium tomatoes (diced), 4 slices bread (cubed), 2 tbsp olive oil, salt, pepper, optional parmesan and basil.
1) Boil pasta in salted water until al dente (about 8–10 min). 2) While pasta cooks, pan-fry bacon over medium heat until crisp; remove and drain on paper towel, reserving 1 tbsp fat. 3) In the same pan, add bread cubes and 1 tbsp olive oil; toss until golden to make croutons, then add diced tomatoes briefly to warm — season. 4) Drain pasta, return to pot, add bacon, tomato croutons, remaining olive oil, salt, pepper and toss. 5) Serve with grated parmesan and basil if desired.
Timing: Prep 15 min, Cook 20 min. Tips: dry bread a little before toasting for crisper croutons; reserve some bacon for garnish. Variations: add garlic when toasting bread, or toss with a splash of lemon juice for brightness.
