Notes: duplicate lines in the list are redundant; use 1 set of each item. You need 1 lb chicken (cut), 3 garlic cloves, 1 medium onion, 2 potatoes, 2 large eggs, olive oil, salt, pepper.
1) Heat oil and sear seasoned chicken until golden, 4–5 min. 2) Push aside, sauté onion and garlic 2–3 min. 3) Add potatoes, season, stir to coat, layer, cover and cook 12–15 min until tender and chicken done. 4) Create two wells, crack eggs, cover and cook 4–6 min until whites set, yolks soft. 5) Rest 1 min, adjust seasoning.
Serve straight from skillet. Optional: drizzle of lemon juice or herbs like parsley for color. Ideal with a green side or crusty bread.
