Preheat oven to 425°F (220°C). Pat thighs dry. Mix olive oil, minced garlic, lemon juice and zest, salt, pepper, and dried thyme. Rub under and over the skin where possible.
Arrange skin-side up on a sheet pan with space between pieces. Roast until skin is golden and internal temp hits 165°F (74°C), about 30–40 minutes. Optional: broil 2–3 minutes to crisp skin.
