This quick bowl comes together in under 40 minutes and builds flavor as you go.

  • Use roasted tomato oil to add depth without extra fat
  • Wilt spinach just until tender to keep color and nutrients
  • Crispy tofu gives protein when chicken is not desired

Make the base and flavor foundation

Prep and sear tofu or chicken, then build flavor in the pan with onions, garlic, and tomatoes. Save 1–2 tbsp roasted tomato oil to drizzle over bowls for rich freshness.

Wilt greens and bring components together

Wilt spinach just until bright green and tender. Toss in a splash of soy and lemon for brightness, then rejoin with pan vegetables and protein.

Assemble and finish the bowls

Serve over cauliflower rice for a lighter texture. Top with almonds and yogurt if desired, finishing with lemon juice or chili flakes for brightness.

Ingredients

  • 2 pieces chicken breast
  • 3 cloves garlic
  • 1 medium onion
  • 2 tbsp olive oil
  • 1 lemon
  • 1 cup long-grain rice
  • 2 medium tomatoes
  • 4 cups baby spinach
  • 1 tsp smoked paprika
  • 1/2 tsp chili flakes
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp toasted sliced almonds
  • 2 tbsp plain yogurt (optional)

Instructions

  1. Press and cube 2 pieces firm tofu, then toss with 1 tsp smoked paprika, 1/2 tsp chili flakes, 1 tsp salt, 1/2 tsp black pepper, 1 tbsp soy sauce and juice of 1/2 lemon and let sit 10 minutes
  2. Thinly slice 3 cloves garlic and 1 medium onion
  3. Heat 1 tbsp olive oil in a large skillet over medium-high heat and sear tofu cubes until golden on all sides, then remove and set aside
  4. Add remaining 1 tbsp olive oil to the skillet, reduce heat to medium, and gently cook sliced onion and garlic until softened and fragrant
  5. Halve 2 medium tomatoes, add to the pan and cook until they soften and release juices
  6. Spoon 1–2 tbsp of the warm tomato oil from the pan into a small bowl to drizzle later
  7. Add 4 cups baby spinach to the skillet, toss until just wilted, then season with a splash of soy sauce and a squeeze of the remaining lemon
  8. Push the vegetables to the side, add the tofu back to the pan and toss together to warm through and meld flavors
  9. In a separate pan, quickly stir-fry 1 cup riced cauliflower in a little oil until tender but still slightly firm, seasoning with a pinch of salt and a dash of sesame oil if available
  10. Divide cauliflower rice between bowls, top with the tofu and wilted spinach mixture, and drizzle reserved roasted tomato oil over each bowl
  11. Garnish with 2 tbsp toasted sliced almonds and a dollop of 2 tbsp plain yogurt if using, and finish with extra lemon juice or chili flakes to taste
