- 1 cup sushi or short-grain rice (x1). 1 1/4 cups water. 2 tbsp honey. 1/4 tsp fine salt. Optional: 1 tbsp unsalted butter, 1/2 tsp vanilla extract, 1 tbsp toasted sesame seeds or chopped nuts.
Rinse the rice until the water runs clear. In a small saucepan, combine rice, water, honey, and salt. Bring to a gentle boil, stir once to dissolve honey. Cover, reduce heat to low, simmer 15–18 minutes until water is absorbed and rice is tender. Off heat, let sit 10 minutes. Stir in butter and vanilla if using until glossy. Fluff and divide between two bowls. Garnish with sesame seeds or nuts if desired.
Serve warm. Optional toppings add texture and aroma. This scales easily for two servings and uses a single pot for easy cleanup.
