A quick, balanced one-pan Desi macaroni you can make in 35 minutes.
Ingredients: 200 g macaroni, 200 g chicken (bite-size), 1 medium onion (sliced), 3 garlic cloves (minced), 2 tomatoes (chopped), 150 g cabbage (shredded), 1 small potato (diced), 2 tbsp olive oil, 1 tbsp soya sauce, 1 tbsp chili sauce, 1 tsp vinegar, 2 tbsp curd, 1 sprig coriander (chopped), juice of 1 lemon, salt and pepper. Prep: Boil macaroni in salted water 8–10 min until al dente; drain and toss with 1 tsp oil. Pat chicken dry and season with salt and pepper.
Sauté: Heat oil in a large pan over medium-high. Fry potatoes 4–5 min until starting to soften. Add onion and garlic; cook 2–3 min until translucent. Add chicken and brown 4–5 min. Add veg & sauces: Stir in tomatoes and cabbage; cook 3–4 min until cabbage wilts. Mix soya sauce, chili sauce, vinegar and curd; pour into pan and combine. Add macaroni, toss to coat and heat through 2 min. Finish with lemon juice and chopped coriander.
Serve hot with extra lemon wedges and a spoon of curd on the side. Variations: add green peas or bell peppers for color; use whole-wheat pasta for more fiber. To meal-prep, pack sauce and pasta separately and combine when reheating.
