One pot, simple steps: sear, simmer, add plantains late for perfect texture.
Ingredients (serves 4): 4 medium plantains (peeled, sliced 2–3 cm diagonal), 800 g beef chunks, 1 beef bone, 2 hot peppers (1 yellow, 1 red; seeds optional), 2 tbsp cooking oil, 1 medium onion (chopped), 3 cloves garlic (minced), 1 tsp salt, 500 ml water.
1) Trim and pat-dry beef; sear in hot oil in a large pot until browned, then remove. 2) Sauté onion and garlic until translucent. 3) Return beef, add beef bone and chopped peppers, sprinkle salt and pour in 500 ml water. Bring to a boil, reduce to low, cover and simmer 30–40 minutes until beef is tender. 4) Add plantain slices, stir gently, cover and simmer 15–20 minutes until plantains are soft but hold shape. Remove bone, taste and adjust seasoning, then serve hot.
Tips: Brown meat well for deeper flavor. If stew reduces too much, add 50–100 ml water and continue simmering. For milder heat remove pepper seeds; for more depth, add a bay leaf or a splinter of smoked paprika. Serve with rice, yams or greens.
