Ingredients: - 500 g beef mince - 1 cup (200 g) long-grain rice, rinsed - 200 g mushrooms, sliced - 3 cloves garlic, minced - 1 tbsp oil - 2 cups beef broth or water - Salt and pepper to taste
1) Heat 1 tbsp oil in a large skillet over medium-high heat. Add beef mince and brown, breaking up with a spatula. 2) Stir in minced garlic and cook 1 minute. Add mushrooms and cook until softened. 3) Stir in rinsed rice and toast 1–2 minutes. Pour in 2 cups broth, season with salt and pepper, bring to a boil. 4) Reduce heat to low, cover and simmer 15–20 minutes until rice is tender and liquid is absorbed. Rest 5 minutes, fluff and serve.
Tips: Rinse rice to remove excess starch; keep the lid on while simmering for even cooking. Variations: swap to brown rice (increase simmer time to ~40–45 min, add 1/4–1/2 cup extra liquid), toss in spinach or frozen peas at the end. To boost flavor, add 1 tsp soy sauce or Worcestershire when adding broth.
