Whisk eggs with salt and pepper until uniform. Grate the cheddar and set aside. Heat a nonstick skillet over medium-low and melt butter until foaming.
Pour beaten eggs into the skillet and cook without stirring until the edges begin to set. Lift edges with a spatula to let uncooked egg flow underneath, creating an even cook.
When the top is mostly set but soft, sprinkle cheese on one half, fold over, and cook 30–60 seconds until cheese’s melted and eggs are just done. Slide onto a plate and serve immediately.
