Ingredients (serves 2): 4 tbsp peanut butter, 2 slices whole wheat bread, 1/2 white-fleshed dragon fruit (sliced), 2 tbsp Complan powder, 2–3 tbsp water to thin. Optional: extra seeds or honey.
1) Toast bread until golden. 2) Stir Complan with 2–3 tbsp water until smooth and pourable. 3) Spread 2 tbsp peanut butter on each toast. 4) Peel and slice dragon fruit; arrange on toast. 5) Drizzle or swirl Complan paste over the fruit and serve immediately.
For crunch add toasted seeds; swap whole wheat for sourdough for more tang. If Complan is too thick, add water a teaspoon at a time. For sweeter toast, drizzle a little honey after the Complan swirl.
