Ingredients: 300 g pasta, 400 g tomatoes (chopped), 150 g spinach, 150 g bacon (chopped), 2 tbsp olive oil, 2 cloves garlic (minced), 1 tsp salt, 1/2 tsp black pepper, 50 ml cream, 30 g grated Parmesan. Prep: 10 mins. Cook: 15 mins. Difficulty: 2/5. Serves 3–4.
1) Boil pasta in salted water according to package until al dente; reserve 100 ml pasta water and drain. 2) Fry bacon in olive oil until crisp, remove and drain on paper. 3) In same pan, sauté garlic 30–60s, add chopped tomatoes and cook 3–4 mins until softened. 4) Add spinach and cook until wilted. 5) Stir in cream, Parmesan, salt and pepper; add pasta and a splash of reserved pasta water to reach desired creaminess. 6) Fold in bacon, adjust seasoning, serve immediately.
Tips: Use ripe tomatoes for best flavor; if tomatoes are very watery, drain excess before adding. Variations: swap bacon for pancetta or mushrooms. To make it lighter, use less cream and more pasta water. Finish with lemon zest or extra Parmesan if desired.
