Use 1 kg potatoes (peeled, chunked), 200 ml warm milk, 2 tbsp olive oil, 1 medium onion (thinly sliced), salt and pepper to taste.
Cover potato chunks with cold salted water, boil then simmer 15–20 min until very tender. While they cook, sauté sliced onion in olive oil until soft and lightly golden. Drain potatoes, return to pot off heat, add warm milk and a splash of oil, then mash to desired creaminess. Fold in onions, season with salt and pepper, adjust milk or oil and serve hot.
For richer mash use butter instead of some oil. Add roasted garlic, chives, or grated cheese for flavor. Use a ricer for ultra-smooth texture or a masher for a rustic finish.
