Ingredients: 1 kg potatoes (peeled, cut into even chunks), 200 ml milk (warmed), 1 medium onion (thinly sliced), 2 tbsp olive oil, salt and pepper to taste. Prep time: 10 minutes. Warm the milk while potatoes boil and slice the onion thinly.
1) Boil potatoes in salted water for 15–20 minutes until tender. 2) While potatoes cook, heat olive oil in a pan over medium and gently sauté onions until soft and lightly golden (6–8 minutes). 3) Drain potatoes, return to pan, mash briefly. 4) Stir in warm milk a little at a time until you reach desired creaminess. 5) Fold in sautéed onions, season with salt and pepper, and serve hot.
Tip: For extra silky mash, mash potatoes through a ricer. Variation: swap milk for plant milk or stock for dairy-free; use butter or cream for richness. Serve with roasted meats, grilled vegetables, or as a hearty side.
