Cook pasta in salted water until al dente. Reserve 60 ml pasta water, then drain.
Sauté garlic in olive oil 30 seconds, add mushrooms and cook until browned. Stir in chicken and warm through.
Add cream, Dijon mustard, and half the Parmesan; simmer to thicken. Toss with pasta, add pasta water as needed, season, then finish with remaining Parmesan and parsley.
