A 3-ingredient pasta that’s ready in 15 minutes and reliably creamy.
200 g pasta, 2 large eggs, 100 ml milk, salt, pepper, plus a saucepan, colander, bowl and fork or whisk.
1) Bring salted water to a boil and cook pasta until al dente. 2) While pasta cooks, whisk eggs and milk with a pinch of salt and pepper. 3) Reserve ~60 ml (1/4 cup) pasta cooking water, drain pasta. 4) Off the heat, return pasta to the pot, pour egg mixture over and toss quickly—add reserved water a little at a time until sauce is silky. 5) Serve immediately.
Prep 5 min, cook 10 min, difficulty 1. Work off heat to avoid scrambled eggs. Use any short pasta; swap milk for cream or a plant milk for richer or dairy-free results.
