Ingredients (serves 4): 12 oz short pasta; 1 cup spaghetti sauce; 1 cup chicken gravy; 1 cup beef broth; 1 can (10.5 oz) cream of chicken soup; 1 cup half-and-half; 1 cup cooked rice; 1 tbsp taco seasoning; 1 tbsp brown gravy mix; 1/2 cup sour cream; 1/2 cup ricotta; 1/2 cup grated Parmesan; 4 cheddar slices; 4 pepper jack slices; 2 stalks green onion; 1 medium yellow onion; 3 cloves garlic; 1 avocado; salt and pepper to taste.
Preheat oven to 375°F (190°C) and grease a 9x13 dish. Cook pasta to al dente, drain. Sauté diced onion until translucent, add minced garlic 1 minute. Stir in spaghetti sauce, chicken gravy, beef broth, cream of chicken soup, half-and-half, taco seasoning and brown gravy mix; simmer 5 minutes. Off heat, stir in sour cream, ricotta and Parmesan until smooth. Fold in cooked pasta and rice so everything is evenly coated.
Layer half the pasta mixture in the dish, tear cheddar and pepper jack slices over it, add remaining pasta and gently mix to distribute cheese. Top with any remaining torn slices and extra Parmesan. Cover with foil and bake 20 minutes, remove foil and bake 10 more minutes until bubbly and slightly golden. Rest 5 minutes, then garnish with sliced green onions and diced avocado.
