4 whole eggs (separate yolks and whites). Pinch of salt. Optional: pepper, grated cheese, chopped herbs.
Preheat oven to 220°C (425°F); line a baking sheet. Whip chilled egg whites with a pinch of salt until stiff, glossy peaks form. Spoon into four mounds, make shallow wells, and bake 3 minutes until lightly golden. Gently add one yolk to each well and bake 3–4 minutes more until yolks reach desired doneness. Season and serve immediately.
For extra stability add 1/8 tsp cream of tartar. Fold in 1–2 tbsp grated cheese or herbs for flavor. Adjust final bake time: ~3 min for runny yolks, 4–5 min for slightly set yolks.
