A 30-minute, high-protein skillet dinner with minimal prep.
400 g chicken breast, trimmed and sliced; 200 g broccoli florets; 100 g fresh spinach; 2 tbsp olive oil; 1 tsp black pepper; 1/2 tsp salt.
Prep: slice chicken into bite-sized pieces and season with salt and pepper. Heat oil in a large skillet over medium-high. Add chicken in a single layer and sauté 4–6 minutes until browned and cooked to 75°C (165°F), then remove. In the same skillet add broccoli (with a splash of water if needed), cover and steam-sauté 3–4 minutes until tender-crisp. Uncover, add spinach and cook 1–2 minutes until wilted. Return chicken, toss to combine, adjust seasoning, and serve immediately.
Cut chicken evenly for uniform cooking. Use frozen broccoli—add a minute to cooking time. For more flavor, add a minced garlic clove when browning chicken or finish with a squeeze of lemon.
