Ingredients (serves 4): 2 tbsp butter, 1 small onion, 100 g cheddar (grated), 6 slices bread, 4 strips bacon, 200 g cooked chicken, salt and pepper. Note: quantities in the original list were duplicated; use the amounts above.
Preheat oven to 200°C (400°F) or heat a grill/toaster oven. Thinly slice the onion. Melt 1 tbsp butter in a skillet over medium heat and sauté onion until soft. Cook bacon until crisp, drain and crumble. Shred or chop cooked chicken and grate cheese. Mix chicken, bacon, sautéed onion and two-thirds of the cheese; season. Butter one side of each bread slice and place buttered side down. Top with the chicken mixture and sprinkle remaining cheese. Bake 8–10 minutes until cheese melts and edges are golden. Let cool briefly before serving.
For extra crispness, broil for the last 1–2 minutes while watching closely. Add chopped herbs (parsley or chives) or a pinch of smoked paprika to the mix. To make smaller bites, cut finished toasts into halves or fingers.
