A simple, family-friendly bake that combines beef, bacon and spinach under melty cheddar.
400 g beef mince, 200 g streaky bacon (roughly chopped), 200 g bagged spinach (washed), 150 g plain flour, 250 g cheddar cheese (grated), 1 onion (optional, diced), 2 cloves garlic (optional, minced), 1 tsp salt, ½ tsp black pepper, 1 tsp dried oregano, 2 tbsp oil or butter.
1) Preheat oven to 200°C (390°F). 2) Cook bacon in a skillet until just crisp; remove and drain. 3) In same pan, brown beef mince with onion and garlic (if using); season with salt, pepper and oregano. 4) Stir in spinach until wilted; return bacon. 5) Mix in 2 tbsp flour to bind, then fold in half the grated cheddar. 6) Transfer mixture to a baking dish, sprinkle remaining flour lightly over top, then cover with remaining cheddar. 7) Bake 25–35 minutes until cheese is golden and bubbling. Let rest 5 minutes before serving.
Prep 20 min, cook 35 min, difficulty 3/5. Serve with salad, rice or crusty bread. Variations: swap cheddar for mozzarella or add a spoon of tomato paste for tang. For a lighter version use turkey mince and reduce bacon.
