Ingredients list and quick prep: 300 g plain flour, 100 g cold unsalted butter, 1 tsp salt, 80 ml cold water, 1 large egg (reserve 1/2 for glaze), 200 g streaky bacon, 400 g minced beef, 150 g fresh spinach, 150 g cheese block (grated), 1/2 tsp ground black pepper. Prep time 25 min, cook 30 min.
Make dough: rub butter into flour with 1 tsp salt until breadcrumb texture, mix 80 ml cold water to form a firm dough, chill 15 minutes. Cook filling: fry chopped bacon until crisp, add minced beef and cook through, stir in spinach until wilted, season with pepper, cool and mix grated cheese. Roll dough, cut circles (~12 cm), spoon filling onto half, brush edges with beaten egg, fold and seal with fork.
Bake on a lined tray at 200°C (400°F) for 20–25 minutes until golden, brush with remaining egg halfway if needed. Serve warm; cool slightly before packing. Store refrigerated up to 3 days or freeze baked pies up to 1 month.
