  6. Halve 2 medium tomatoes, add to the pan and cook until they soften and release juices
  7. Spoon 1–2 tbsp of the warm tomato oil from the pan into a small bowl to drizzle later
  8. Add 4 cups baby spinach to the skillet, toss until just wilted, then season with a squeeze of the remaining lemon
  9. Push the vegetables to the side, add the beef and sausage back to the pan and toss together to warm through and meld flavors
  10. Cook 1 cup long-grain rice according to package instructions
  11. Divide cooked rice between bowls, top with the beef, sausage and wilted spinach mixture, and drizzle reserved roasted tomato oil over each bowl
