500 g beef mince, 3 medium potatoes (diced), 2 medium carrots (sliced), 1 large onion (finely chopped), 200 g rice (long or medium grain), 4 slices bread (crumbed), 1–2 tbsp oil, 700 ml beef or vegetable stock, 1 tsp salt, 1/2 tsp pepper, 1 tsp paprika or seasoning of choice.
1) Prep (20 min): peel and dice potatoes, slice carrots, chop onion, rinse rice. 2) Brown mince: heat oil in a large ovenproof pan or deep skillet over medium-high heat; cook mince until browned; drain excess fat. 3) Sauté onion and carrot with the mince 4–5 min. 4) Add potatoes, rice, seasoning and stock; stir, bring to a simmer. 5) Cover and cook on low for 20–25 min (or transfer to a 180°C/350°F oven covered for 25–30 min) until rice and potatoes are tender. 6) Stir in breadcrumbs made from the 4 slices of bread for texture, adjust seasoning, and rest 5 min before serving.
Cook time total ~40 min; prep 20 min. Use instant rice — add near end and reduce liquid. For a lower-carb option, replace rice with extra potatoes or cauliflower rice. Freeze portions in airtight containers for up to 3 months; reheat thoroughly.
