500 g beef mince; 3 medium potatoes, peeled and diced (1–2 cm); 2 medium carrots, diced to match; 1 large onion, finely chopped; 200 g rice; 1–2 tbsp oil; 150–200 ml water or stock; salt, pepper and a pinch of dried herbs; 4 slices bread, toasted or warmed.
1) Rinse rice and cook in 400 ml salted water until tender, then fluff and keep covered. 2) Heat oil in a large frying pan over medium heat; fry onion until soft and translucent. 3) Add beef mince, break up and brown evenly. 4) Stir in diced potatoes and carrots, season, add 150–200 ml water or stock, bring to a simmer, cover and cook 12–15 minutes until vegetables are tender and liquid reduced. 5) Check seasoning, adjust, and serve spooned over rice with bread on the side.
Prep 20 min, Cook 40 min. Use stock for deeper flavour; add frozen peas in the last 5 minutes for colour. For a quicker meal, par-cook potatoes in the microwave for 4–6 minutes before adding. Leftovers reheat well.
