Gather 600 g total beef mince, 300 g spinach, 1 onion, 1 clove garlic, 1 tbsp olive oil, oregano, salt, and pepper. Dice onion and mince garlic, rinse spinach and roughly chop.
Heat oil in a large skillet over medium-high. Sauté onion 3-4 minutes, add garlic 30 seconds, add beef and brown. Season with oregano, salt, and pepper. Stir in spinach until wilted, 1-2 minutes more.
Taste and adjust seasoning. Serve hot as is or with a side like quinoa, rice, or crusty bread.
