Season the chicken with salt and pepper. Wrap each breast with two bacon slices and secure with toothpicks. Sear 2–3 minutes per side in an ovenproof skillet with 1 tbsp olive oil until bacon browns.
Transfer the skillet to a 200°C (400°F) oven and bake 15–20 minutes until chicken is 75°C (165°F). Remove, top with 50 g cheese, and melt 2–3 minutes in the oven.
Meanwhile, sauté sliced onion in 1 tbsp olive oil until translucent (4–5 minutes). Add garlic for 30 seconds, then add spinach and cook 2–3 minutes until wilted. Season with salt and pepper, rest chicken 5 minutes, remove toothpicks, and serve over the spinach.
