Crisp bacon-wrapped chicken atop buttery toast with melted cheddar in under an hour.
2 boneless chicken breasts, 6 slices bacon, 4 slices bread, 1 cup shredded cheddar, 2 tbsp butter, 1 tsp garlic powder, 1/2 tsp salt, 1/2 tsp black pepper, 1 tbsp olive oil, 1 tbsp chopped parsley.
Preheat oven to 400°F (200°C). Slice chicken into thin cutlets (~1/4"), season with salt, pepper, garlic powder. Wrap each piece with a bacon slice and secure if needed. Brown in olive oil 2–3 minutes per side to render bacon. Transfer to a sheet and bake 10–12 minutes until chicken is cooked and bacon is crisp. Toast bread, spread butter, top with a bacon-wrapped chicken piece, sprinkle cheddar, then broil 1–2 minutes until cheese bubbles. Garnish with parsley and rest 1 minute before serving.
Prep ~15 minutes, cook ~25 minutes, total ~40 minutes. Serves about 4 (adjust chicken and bacon accordingly). For faster prep, butterfly chicken to make more cutlets; for extra crisp, finish chicken under the broiler briefly before assembling.
