Make a versatile, savory jam in one skillet with just three main ingredients.
Ingredients (serves 6): 2 medium onions, thinly sliced; 6 slices bacon, chopped into 1/2-inch pieces; 8 oz mushrooms, cleaned and sliced; 1 tsp sugar; salt and black pepper. Equipment: large skillet, wooden spoon, paper towels, airtight container.
Prep 10 min, cook ~35 min. Cook bacon in a large skillet over medium until crisp; transfer to paper towels, leaving fat. Reduce heat to medium-low, add onions and cook 20–30 min, stirring occasionally. At halfway, add 1 tsp sugar and a pinch of salt. When onions are soft and deep golden, raise heat to medium and add mushrooms; cook 6–8 min until liquid evaporates and mushrooms brown. Return bacon, stir 2–3 min, season to taste, remove from heat and cool slightly.
Uses: spread on toast, mix into pasta, top burgers or grilled meats, or serve with cheese. Storage: refrigerate up to 5 days or freeze in small portions up to 2 months. Reheat gently on stove or microwave.
